  • 1/2 c Dijon mustard

  • 2 tbsp apple cider vinegar 

  • 1/4 c mayonnaise

  • 2 tbsp capers, roughly chopped, plus 1 tsp brine

  • 2 tbsp parsley, roughly chopped 

Directions

  • Take a large pot and add some beef, onion, celery, and pickling spices. Add some water until it covers all of them by just 2 inches. Cover it, and on low heat, let it simmer for about 3 to 3.5 hours until tender.
  • In a small bowl, add Dijon mustard and mix it with apple cider vinegar. 
    In the other bowl, add mayo, capers, caper brine, and parsley. Mix them together.
    Add salt and pepper, as per taste, to both bowls.
  • Add carrots and cabbage to the large pot. Simmer them too for about an hour until the cabbage is tender. 
    Remove the vegetables once they are tender, and then slice the corned beef and season it with salt and pepper.
  • Serve hot, along with two sauces that we prepared in two different bowls.
