  • 2 slices turkey bacon 

  • 2 medium zucchini (about 1 lb. total) 

  • 1/2 tsp kosher salt

  • 1/2 tsp Freshly ground black pepper

  • 1 c shredded cheddar

  • 1 large avocado, halved, pitted, and flesh scooped

  • 3 piece cherry tomatoes, finely chopped 

  • 1 tbsp finely chopped red onion 

  • 1 tbsp fresh lime juice 

  • 1 tsp finely chopped fresh cilantro leaves, plus more for serving

  • 1 small Jalapeño, stemmed, seeded, and finely chopped, divided

Directions

  • Grease the air fryer basket with cooking spray.
    At 350°, cook the bacon in the air fryer until crispy and well cooked. Flip them halfway in the basket and bake for approximately 5 minutes.
    Transfer to a cutting board, and once cooled, chop finely.
  • Cut zucchini in half lengthwise and then crosswise.
    Remove the seeds with the help of a scoop.
    Create 8 boats like this with a 1/4″ thick bottom and sides.
    Spray a slight cooking spray over Zucchini and sprinkle some salt and pepper over it.
  • Place the zucchini in the air fryer basket with the cut side up.
    At 400°F for approximately 7 minutes until it cooks properly and turns golden in some portions.
  • With precaution, remove the basket from the air fryer and fill it with cheese over the zucchini.
    Now add it back to the air fryer and, at 400°F, cook for an additional 1 to 2 minutes until the cheese looks bubbly.

    Add tomatoes, onion, lime juice, cilantro, 1/4 teaspoon salt, and 2 teaspoons jalapeno, and mix well.
  • Now place the ready zucchini boats on the platter and add guacamole over the zucchini boats with the help of a spoon.
