  • FOR ROLLS
  • 2 c finely ground almond flour

  • 2 tbsp coconut flour

  • 1/4 c keto-friendly granulated sugar (such as Swerve)

  • 1 tbsp gluten-free baking powder

  • 2 large eggs

  • 2 tsp pure vanilla extract

  • 2 c shredded mozzarella

  • 4 oz cream cheese

  • 3 tbsp butter, melted, divided, plus more for brushing 

  • 1/3 c packed keto-friendly brown sugar (such as Swerve)

  • 1 tbsp ground cinnamon

  • FOR GLAZE
  • 3 oz cream cheese

  • 2 tbsp heavy cream

  • 2 tsp eto-friendly granulated sugar (such as Swerve) 

Directions

  • Let’s prepare the rolls by adding almond flour, granulated sugar, baking powder, and coconut flour to a large bowl and whisking until combined.
    Now whisk eggs with vanilla in another bowl.
  • Take a microwave-proof bowl, add mozzarella and cream cheese, and microwave them. 
    Keep stirring every 30 minutes until the cheese melts properly. It will take around 90 seconds in total.
    Add the egg and cheese mixture to the dry mixture and combine together.
  • Now place a piece of parchment paper over a flat surface, add dough to the paper, place another piece of parchment paper over the dough, and create a rectangular sheet measuring 16″ x 10″.
    Now spread the melted butter over the dough and sprinkle some cinnamon and brown sugar.
  • At 375°, preheat your oven.
    Arrange a medium-sized baking pan with parchment paper and grease it with butter.
    From the long end, roll the dough into a log.
    Let it set for 10 minutes.
  • Make 12 equal pieces of the roll and place them on the baking sheet. 
    Now spread the remaining 1 tablespoon of melted butter over these slices.
  • Bake for 30 minutes until the rolls are golden and crispy. Let them cool.
  • Now let’s prepare the icing by melting cream cheese in an ovenproof bowl.
    Add some heavy cream and swerve and whisk them until a smooth, consistent batter is formed.
  • Now add icing over hot rolls before serving on a plate.
