  • FOR THE MAC & CHEESE
  • 2 medium heads cauliflower, cut into florets

  • 2 tbsp extra-virgin olive oil

  • 1 tsp Kosher salt

  • 1 c heavy cream 

  • 6 oz cream cheese, cut into cubes

  • 4 c shredded cheddar

  • 2 c shredded mozzarella

  • 1 tbsp hot sauce (optional)

  • 1 tsp Freshly ground black pepper

  • 2 tbsp Butter, for baking dish

  • FOR TOPPING
  • 4 oz pork rinds, crushed

  • 1/4 c freshly grated Parmesan

  • 1 tbsp extra-virgin olive oil

  • 2 tbsp freshly chopped parsley, for garnish

Directions

  • At 375°F, preheat the oven. Grease a 9″ x 13″ baking dish with butter.
    Take a large bowl, add cauliflower with some salt, and toss them well.
    Take two baking sheets and spread the cauliflower in two phases. Roast for 40 minutes until tender and get a golden finish.
  • While the cauliflower is roasting, take a large pot and heat the cream in it until it simmers.
    Reduce the heat, add the cheese, and let it melt.
    Remove from heat and add hot sauce if you like. Add some salt and pepper to taste.
    Fold the roasted cauliflower and add some more seasoning if necessary.
  • Transfer the entire mix into the baking dish.
  • Take a medium bowl and add parmesan cheese, oil, and pork rinds. Mix them well.
    Spread this mixture over the cauliflower and cheese in the baking tray.
  • Bake for 15 minutes until it looks golden.
