Greek Chicken: If you want to try some new varieties of chicken dishes, then this Greek Chicken Recipe is for you, my friend. This recipe includes easy ingredients available at the ease of your home, and you’re good to go for preparing a delightful chicken dinner.

Ingredients

  • 3 tbsp

    • extra-virgin olive oil, divided

    • Juice of 1 lemon

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 lb chicken thighs

  • 1/2 tsp kosher salt

  • 1/2 tsp Freshly ground black pepper

  • 1/2 lb asparagus, ends removed

  • 1 piece zucchini, sliced into half moons

  • 1 piece lemon, sliced

Directions

  • Take a bowl and add 2 tablespoons of olive oil, oregano, and lemon juice. Add chicken thighs along with them and mix well. Cover them properly with plastic wrap and marinate in the fridge for 15 minutes minimum and up to 2 hours maximum.
  • At 425°F, preheat the oven.
    Take an ovenproof skillet and heat 1 tablespoon of olive oil on medium heat. 
    Season the marinated chicken with salt and pepper from both sides, then add the chicken skin side down to the skillet and pour in the remaining marinade.
  • Cook for 10 minutes until the chicken skin turns crispy. Flip the chicken and add lemon slices, along with asparagus and zucchini, to the skillet.
  • Put the ovenproof skillet in the oven and bake for 15 minutes until the chicken is cooked thoroughly.

Notes

  • Fresh chicken is always advised.
